Can someone please direct me to literature regarding using strain gages (120 or 350 Ohm) in conjunction with a Parallax Basic Stamp?

On the strain gauge only, try National Semi conductor for their op amps etc.

The strain guage output is very low, so you need an amplifier followed by an A/D converter. I seem to remember that the Basic Stamp has a simplified A/D capability, if you don't need high accuracy.
