Smoked turkey over real fire. That's been my purview for the last ?8? years. Brine it first (Alton Brown's original brine recipe) and then America's Test Kitchen / Cook's Country version of smoking on the charcoal grill. 18 pounder is usually done in about 2 hours, plus 1/2 hour rest. I didn't cook this year and am seriously Jonesing!!!
