data logger for a temperature sensor

Looking for a circuit for a 9vdc data logger that has a high response to temperature change and about 8 - 10 samples per sec. I'm working on a science fair project involving sounding rockets that were used for atmospheric weather testing. All data will be downloaded to a laptop running windows 95/98/2000. Any suggestions where to start looking?
build it and they will come
