How to recognize/find audio stream encoding ?

Hi.
I spent about six hours today recording streams from the net and would like to know how to find out the encoding, sample rate, bits, they transmit, and if every tune is the same or can vary.
I suppose that if I save/burn CD the tune in its 'native resolution', would have its maximum fidelity; and If I save as a 'finer' encoding, I would gain nothing and waste space. Is that right ?
