The unipolar, I think that's the one with the center-taps, is the most versatile. You can use it both ways. eg: a unipolar motor with both windings tapped 6V-0V-6v can be used as a bipolar 12V. I think staying in the OUT box means that no sysop has logged in to receive the PM. When the sysop logs in to check the mail account, the message goes into their IN bin and only then does it report as SENT in your account.

I suspect that you have those fixtures sealed so well that condensation forms inside the fixture at night while the lamp is off. Vent it so air can flow from bottom to top but have a hood so that water can't get in.

Wouldn't the easiest thing be adding a wall mounted variable speed control and leave the the fan itself on high speed. Right.
