wet and dry thermistor or a drying thermistor exibit a resistance differential. The pressure caused by mass of liquid could be measured. a light focused could be deflected or decreased. sound or frequency in a cavity changes with volume. isotopic load could beam through a glass side pipe.

how about interfacing a 24 bit A/D
The project measures voltage to 6 1/2 places but the LCD display shows 5 1/2 digits accurately.

also when a thermistor gets wet and the op-amp with a Vref will goes low on the output.

I would guess that upscaling a sherline cnc kit to drive big steppers with brakes would have the documentation, software support and others that custom build mods but I have'nt personally done that.
